The Felicetti family has been crafting the finest pasta in Predazzo, Italy since 1908. Over four generations, their passion for cooking has never diminished. As a core value, the family ensures environmental responsibility in their pasta-making process by using only pure water and air from the land.

Felicetti uses three different single, mono-varietal wheats to create their Monograno line of pasta: Kamut and Farro, which are ancient grains originating thousands of years ago in Egypt and the Middle East, and Matt, a modern heritage grain. Matt is a rich variety of durum wheat grown in Puglia, Italy, with a distinct aroma of summertime hay and a flavor profile reminiscent of stone-baked bread and butter.

Felicetti carefully sources and selects the Matt wheat from local farms, with whom they have been working for generations. The company contract grows the Matt wheat, stores it at the mill in dedicated silos, and calls for grinding into semolina flour within 24 hours of production. This meticulous process ensures the highest quality ingredients, which are then combined with Felicetti's artisanal pasta-making skills, their alpine water, and clean mountain air.

The result is the perfect al dente pasta, which never overcooks, sticks, or boils over. Felicetti's Monograno line has earned a reputation as one of the premier pastas in Italy, sought after by Michelin-starred restaurants around the world. The pasta's signature traits are its exceptional flavor and ability to maintain the coveted al dente texture well beyond the cooking time.

Felicetti is now managed by the fourth generation of the family, who continue to uphold the company's history as artisanal pasta makers while prioritizing environmental preservation. The Felicetti family's commitment to quality, tradition, and sustainability has contributed to their enduring success and the exceptional reputation of their products.
